The torchon is THE foie gras of purists and connoisseurs. It is an age-old cooking method in which the foie gras is rolled in a cloth and gently poached in a broth, giving it a dense texture and a purity of taste that no other method can match. The torchon deserves wines to match. Serve it with a Sauternes for a great French classic, a sweet Jurançon for its balance, or a Hungarian Tokaji for an out-of-the-ordinary experience. Natural sweet wines such as Maury or Banyuls bring a different dimension to the more generous slices.
On the accompaniment side, favour simplicity so as not to mask the purity of the product. A lightly toasted country bread remains the ultimate pairing. A warm sliced brioche baguette or a plain gingerbread complete the experience without dominating it.

Take the foie gras out of the refrigerator 20 minutes before serving, as its dense texture deserves a good warm-up to reveal all its aromas. Gently remove the cloth, keeping the shape of the roll intact.
Slice with a blade dipped in hot water for clean, even slices. Place each slice on a toasted country bread, adding nothing for the first bite to appreciate the purity of the torchon.
For the following bites, a fleur de sel, crushed pepper or a few drops of walnut oil will be enough. Avoid overly sweet chutneys and confits that would mask its authenticity.
