The torchon deserves wines worthy of it. Serve it with a Sauternes for a great French classic, a sweet Jurançon for its balance, or a Hungarian Tokaji for an out-of-the-ordinary experience. Vins doux naturels such as Maury or Banyuls bring a different dimension to the more generous slices.
For accompaniments, favour simplicity so as not to mask the purity of the product. A lightly grilled country bread remains the absolute pairing. A warm sliced brioche baguette or a plain gingerbread complete the experience without overpowering it.

Take the foie gras out of the fridge 20 minutes before serving, as its dense texture deserves to come properly to temperature to reveal all its aromas. Gently remove the cloth while keeping the shape of the roll intact.
Slice with a blade dipped in hot water for clean, even slices. Place each slice on a grilled country bread, adding nothing for the first bite so you can appreciate the purity of the torchon.
For the following bites, a fleur de sel, some crushed pepper or a few drops of walnut oil will suffice. Avoid overly sweet chutneys and confits that would mask its authenticity.
