Pan-seared foie gras is one of the most spectacular starters in French cooking: a golden, crisp crust and a warm, melting centre in barely two minutes of cooking. Paired with honey-caramelized figs and a slice of gingerbread, it becomes a true festive dish. Here is our recipe for 4 people, with the techniques that make all the difference.
Ingredients for 4 people
Step 1
cut the slices
Take the raw foie gras out of the refrigerator at the last moment: it must stay very cold to slice cleanly. Using a knife dipped in hot water, cut 4 slices about 1.5 cm thick. Lightly score each side in a crosshatch with the tip of the knife, then place the slices in the freezer for 20 minutes. This chill limits melting during cooking.
Step 2
caramelize the figs
Cut the figs into quarters. In a small pan, heat the honey, add the figs and let them caramelize for 2 to 3 minutes over medium heat. Deglaze with the balsamic vinegar, reduce for 1 minute, then keep warm.
Step 3
toast the gingerbread
Toast the gingerbread slices for a few minutes in a toaster or a dry pan. They should be crisp on the surface to contrast with the melting foie gras.
Step 4
sear the foie gras
Heat a pan over high heat without any fat: the foie gras will release its own. When it is very hot, add the slices and sear them for 45 seconds to 1 minute per side, just long enough to form a golden crust. Remove them immediately and place them on paper towels.
Step 5
plate and serve
Place a slice of foie gras on each piece of gingerbread, add a few fig quarters and a drizzle of balsamic juice. Finish with a pinch of fleur de sel and a grind of pepper, and serve immediately.
Secrets of perfect pan-seared foie gras
Cold is your best friend. Very cold foie gras slices cleanly and melts much less when cooked. Never salt before searing: salt draws out moisture and keeps the crust from forming.
Do not overcrowd the pan. Cook two slices at a time at most and pour off the fat between batches, keeping it for cooking potatoes.
Choose quality raw foie gras, firm and ivory in colour. A liver that is too soft will melt more during cooking.
