Tasting tips
Before use, soak the dried ceps in warm water for about 30 minutes to release all their aromatic richness.
At Maison Fayard, we love them in a creamy sauce to accompany a farm-raised poultry, a veal fillet, or a risotto with fresh herbs.
They also pair wonderfully in a cep omelette, a rustic quiche or as a finishing touch on a foie gras toast for festive meals.
